Canned Zucchinis / la recette en anglais
here is a delicious recipe with zucchinis that a quilter made so that we could taste it for our special stack-n-whack day !

Canned Zucchinis
take a cup of coffee to measure (about 100ml) but you can use a bigger cup, it is up to you to decide
First day
3 kgs of zucchinis (+/-6,5 pounds)
a cup of table salt
a cup of oinions
Cut the zucchinis in pieces of about 2 cm
Slice the onions thiny
Put all in a container and stir
Cover and put the container in a cool place for 24 hours
second day
rinse all
make a syrup with
2cups of white vinegar
2 cups of water
3 teaspoons of hard curry
a half teaspoon of black pepper and
2 cups of sugar.
cook so that the sugar will be melted and pour this hot syrup on the zucchinis
cover and let 24 hours in a cool place again.
third day
take off the syrup and cook it again.
pour it once again on the zucchinis
Cover and let it 24 hours more in a cool place.
fourth day
Cook everything together (syrup and zucchinis) during 2 or 3 minutes
Put in cans and close them when it is still warm.
leave to rest during 3 months before eating
these zucchinis can be served with a meat fondue or a raclette (melted cheese served with boiled potatoes ad cold meat) or when you are having drinks.
